Easter this year was a bit of a disaster. Sick contagious child, no family gatherings, no sleep; end of story. By Monday, our child was still sick but recovering and we were faced with a mountain of leftover Easter chocolates. What to do? In the late afternoon, exhausted with both work and cranky child, a wonderful idea came to me; let’s make Easter chocolate leftover cookies!
We had a bunch of Rolos and Kisses, which I had our toddler peel and discovered that this was a great distraction for a recovering child. Next, my husband assembled his basic cookie dough ingredients: butter, sugar (half brown and white), baking soda, egg, and flour. When the cookie dough was ready, we dumped in all of the peeled chocolates. It was quite hard to keep our child from eating the batter.
We formed small ice cream scoop sized dollops of the mostly chocolate cookie dough and placed them on a foil-lined cookie tray. The oven was pre-heated to 375 degrees and after 12 minutes of baking, the most inviting and soul calming smell filled our house. What a delight! The Rolos were especially fun to bite into and discover a gooey melted caramel center.
After a cookie or two, it was no longer disaster Easter followed by manic Monday; instead, it was cookie calming comfort!
