There they were, the most beautiful marbled flanken style short ribs (galbi) just staring at me from the cold case. Without thinking or looking at the price, I grabbed them and walked on. It wasn’t until I got to the register, and $28.95 flashed on the display, that it hit me… My goodness they were expensive! I thought about putting them back, but I had gotten them for my mom’s birthday. Well… I told myself. I’ll find out if this expensive galbi is really worth it or not!
I decided to cook them in a heavy cast iron skillet. First I heated up the skillet on high for a few minutes, lightly brushed some vegetable oil on the bottom, and then turned the heat down to medium. I patted the galbi dry before tossing them in; it was super satisfying to hear the sizzling sound when the galbi made contact with hot surface. They needed to be seasoned with something but I wanted to add more than just salt and pepper so I peeked inside our cupboard. As luck would have it, a brand new bottle of KBBQ marinade was waiting for me. I took a quick taste and decided it was indeed a good fit for the galbi.
After brushing the marinade on top and turning the galibi a few times as it browned, I used food scissors to snip the galbi free leaving a nice bone on the end of each piece. I then turned up the heat on high for the final sear. The smell was heavenly! A quick plating job and off they went to the table! They were tender, succulent, and a perfect bite in every bite!
Yes, they were expensive but the whole family, especially my mom agreed, they were worth it!
