Crab Bisque Hand Pie

For Mother’s day, we went all out and got mom king crab legs from Costco. Surprisingly, we ended up with a decent amount of left over crab. What to do? It’s been some time since I’ve made crab bisque and of course my husband couldn’t agree more. Only one problem, I went too cream heavy. The bisque, while very delicious, turned out to be too rich and I ended up with a lot left over. Faced with having to waste a whole bunch of delicious creamy seafood gravy goodness, there was only one solution; crab bisque hand pies.

As you may know, making pie is one of my true loves. Over the years, I’ve found that savory hand pies are a great way to make delicious leftovers disappear without any complaints from the family. One secret is that I don’t bake them all at once. Actually, after making the hand pies, I vacuum seal them unbaked and freeze them. They can last for up to three months (maybe more but I haven’t tested)!

So a little leftover bisque, some fresh mozzarella, and a sprinkle of flour all wrapped up in a hand sized packet of pie crust; there you have it, a tasty meal that can be enjoyed whenever the savory pie craving hits.
